Good blood can't lie. Laurent Nowak, son of Sylvain (L'Auberge du Colombier) took over this restaurant opened by Dominique Bucaille. An old silk factory with large spaces, clarity, and an open kitchen mark this table at the edge of the old town. With his partner, Julie, he offers a sane regional vision and dishes which clarify and give some breath to this lovely space. Risotto and pan-fried prawns; lamb in herb crust and vegetable confit gratin; roasted filet of daurade and anise-infused fennel; warm chocolate soufflee.... Laurent gains confidence; Sylvain is not far and watches over the operations of a table where we appreciate the measured prices, Provenšal atmosphere, and the terrace.
