The town of Èze couldn't be complete without this majestic and medieval Relais & Châteaux, now modernized to a state of contemporary luxury. The dinning room offers one of the best panoramas of the Côte d'Azur and the beautiful cuisine of Philippe Labbé. Solid experience and confident technique does not prevent him from venturing some exotic inspirations. A sure technician, his vision of the Mediterranean seemed a bit cold at first, but feelings and spontaneity soon took their proper place in his cuisine based on juxtapositions. Green asparagus cooked in chervil-artichoke broth, green apple puree with citrus flavor; grilled loup with Italian bacon; chilled pea puree and mushroom fricassee; young spicy pigeon in slightly salted nougat crust, spring turnip calissons and grilled foie gras with grappa tomatoes. The focus is on the subject, great products and palette of flavors, and a certain theatrical esthetic in the display. Cédric Campanella adds sweet notes with his roasted moka expresso in wafer tiramisu style. Attentive and high level service, sound advice and top level wine cellar with sommelier Philippe Magne. The check flies high too. |
